New England Pear Perry Cake

Ingredients 

For the cake:

  • 1 cup Paracombe Premium Perry ‘Mysterious One’
  • 2 cups Beurre Bosc Pears (3 large or 4 small pears)
  • 1 whole lemon
  • ¼ cup softened butter (4 tablespoons or half a stick)
  • 1 cup caster sugar
  • 2 eggs
  • 2 cups flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup heavy cream
  • Enough butter to grease a 9×9-inch baking pan
  • 1 teaspoon cinnamon
  • 3 tablespoons granulated sugar

For the glaze:

  • 1 cup Paracombe Premium Perry ‘Mysterious One’
  • 1 cup icing sugar
  • 1-2 tablespoons heavy cream or milk
  • Vanilla Ice Cream, optional for serving

 

Instructions:

  • Place the first cup of Perry on the stove and bring to a boil and boil until reduced to ¼ cup.  Set aside to cool.
  • Core and peel the pears and then cut each into 16 slices (fewer slices if using smaller pears).  Have a bowl of water that has a whole lemon squeezed into it.  Place pears into water and then onto a plate to dry and set aside.  This will keep them from turning brown.
  • Preheat oven to 350 degrees
  • In the bowl of a stand mixer with paddle attachment, beat butter and sugar until well mixed.
  • With the mixer running, add one egg at a time beating until smooth.  Scrap sides and beat until light and fluffy, about three minutes.
  • In a medium bowl, sift flour, baking powder, baking soda and salt.
  • Measure out cream and add cooled reduced Perry to cream.
  • With the mixer on low, alternate adding the flour mixture and the cream/perry mixture until well combined.  Scrape sides and mix until smooth.
  • Grease a 9X9 square pan liberally with butter and pour in the batter.
  • Arrange the pears, outer edges up into the top of the batter.
  • In a small bowl or cup, mix the sugar with cinnamon and sprinkle over the top of the cake and place in the oven for 50-60 minutes or until a toothpick inserted into center comes out clean.
  • While the cake is baking, make the glaze.
  • Place the second cup of Perry on the stove as before only reduce down to two tablespoons.  Watch it that it doesn’t evaporate too far.
  • Place the icing sugar in a small bowl and add the reduced Perry along with one tablespoon of milk or cream and stir.  Add the last tablespoon of milk or cream a little at a time until desired consistency.  It should be thick but runny enough to drizzle off the end of a spoon.
  • When the cake comes out of the oven, cool to room temperature and cut into nine squares.
  • Drizzle the glaze over each portion letting it run down the sides and serve.
  • Serve with vanilla ice cream if desired.

Foodie Friday! Perry-Cinnamon Ice Cream

Perry-Cinnamon Ice Cream

Ingredients
2 cups Paracombe Premium Perry
3/4 cup evaporated cane juice or sugar
1 stick cinnamon
2 cups milk
2 cups heavy cream
1⁄4 tsp. ground cinnamon
6 egg yolks

 

Instructions

  1. Whisk Perry, cane juice or sugar, and cinnamon stick in a 4L saucepan over medium-high heat; bring to a boil, and cook, stirring occasionally, until reduced to 2⁄3 cup, about 25 minutes; remove from heat and discard cinnamon stick.  Stir in milk and cream until smooth and then add ground cinnamon and egg yolks; whisk until smooth.  Return saucepan to medium heat and cook, stirring often, until mixture thickens and coats the back of a spoon, about 20 minutes.  Pour custard through a fine strainer into a medium bowl,and let cool; refrigerate until chilled.
  2. Process chilled custard in an ice cream maker according to manufacturer’s instructions. Transfer to a storage container and freeze until firm, at least 4 hours.

Foodie Friday! Cinnamon Sugar-Perry Donuts

Cinnamon Sugar-Perry Donuts

Ingredients
1 34 cups (7 34 oz.) all-purpose flour, sifted
14 cup (1 18 oz.) whole wheat graham flour
3 12 tsp. ground cinnamon
2 tsp. baking powder
1 tsp. baking soda
12 tsp. kosher salt
2 tbsp. unsalted butter
1 12 cups sugar
2 egg yolks
1 tsp. vanilla extract
14 cup Paracombe Premium Perry ‘Mysterious One’
14 cup buttermilk
Canola oil, for forming and frying

 

Instructions

  1. Whisk flours, 2 tsp. cinnamon, baking powder, soda and salt in a bowl; set aside.  In the bowl of a stand mixer fitted with a paddle attachment, beat butter and 1⁄2 cup sugar until fluffy.  Add yolks, vanilla, Perry and buttermilk; mix until smooth.  With the motor running, slowly add dry ingredients and mix until a soft, sticky dough forms.
  2. Combine remaining cinnamon and sugar in a bowl; set aside.  Heat 2 inch oil in a 6L saucepan until a deep-fry thermometer reads 350°.  Using lightly oiled hands, roll about 1⁄4 cup batter into a loose, sticky ball; pat gently into a disk.  With your thumb, make a 1 1⁄2 inch hole in the center of dough; carefully slide into oil and fry, flipping once, until golden, 3–4 minutes.  Using a slotted spoon, transfer to a baking sheet with a wire rack; repeat with remaining dough.  Let donuts cool completely; toss in cinnamon-sugar mixture.

Pear Ginger Spinach Detox Juice

 

Happy New Year Perry lovers! There’s no doubt you all spent the Holiday Season over-indulging in all things delicious, so for our first Friday Shake Up for 2015 we’re bringing you a detox juice!

 

This delicious detoxifying pear, ginger and spinach green juice is perfect for the morning after, so you can get stuck into 2015 minus the hangover!

 

Total time: 5 minutesPear Ginger Spinach Detox Juice in glass

Serves: 2

 

Ingredients

  • 1 large cucumber, roughly chopped
  • 2 ripe pears, roughly chopped
  • 1 cup packed baby spinach
  • 1-inch piece of fresh ginger
  • ½ a lemon

 

Instructions

  1. Add all the ingredients to a juicer or blender and combine until desired consistency is achieved.
  2. Stir then divide evenly between two glasses.
  3. Enjoy!

Friday Shake Up! Ginger Pear Bellini

Ginger Pear Bellini

 

Now that Santa’s left town it’s time to party, and if there’s one day to do a beverage right it’s New Year’s Eve! It’s not too late to stock up on Perry from our online shop, or for something a little different, try this Ginger Pear Bellini.

Serves: 4

 

Ingredients

  • 1 ripe pear
  • ½ cup water
  • ½ cup sugar
  • 4-inch piece of fresh ginger, quartered
  • Champagne

 

Instructions

  1. Puree pear in a food processor and set aside.
  2. Combine the water, sugar and ginger in a small saucepan. Bring to boil and stir until sugar is dissolved. Cover, turn the heat off and let it sit for 30 minutes.
  3. Remove ginger pieces, pour the syrup into the pear puree, stir, cover and refrigerate until cold.
  4. Once cold, spoon about two tablespoons of the puree mixture into a champagne flute, top with champagne and enjoy!

Pear Fizz Holiday Cocktail!

Pear Fizz Cocktail

 

In the spirit of the Holiday Season, this week we’re not waiting for Friday to shake things up! Instead, we’re bringing you this fun and fruity Pear Fizz Cocktail, just in time for Christmas Eve.

 

Total time: 5 minutes

Pear Fizz Cocktail

 

Ingredients

  • 2 cups of pear juice (available from Paracombe Premium Perry)
  • 1/3 cup of pear-flavoured liqueur
  • 1 bottle of sparking wine (Prosecco, Champagne, Cava or sparking cider)
  • 1 pear, pomegranate seeds and/or fresh rosemary to garnish (optional)

 

Instructions

  1. Combine pear juice and pear-flavoured liqueur in a pitcher. Stir together and chill in refrigerator until cold.
  2. Fill champagne glass 2/3 of the way with pear mixture, and then fill glass to top with sparking wine.
  3. Optional: Garnish each glass with thinly sliced pear wedges, pomegranate seeds, or a sprig of fresh rosemary.
  4. Enjoy & Happy Holidays!
