Grilled Ham & Cheese with Pear

This Foodie Friday we’re putting a spin on an old favourite – Grilled Ham & Cheese! Adding fruit makes it healthy right? So we’re proposing the grilled ham & cheese sandwich with pear! It may seem like a strange combination at first, but trust us – the salty taste of the cheese and ham combined with the sweet taste of the pear is a match made in heaven!

 

Total Time: Less than 30 minsGrilled Ham & Cheese with Pears

Serves: 2 (2 Sandwiches)

 

Ingredients

  • 4 slices sandwich bread
  • 250 grams cheese (we love Woodside Cheese Wrights!)
  • 1 pear, thinly sliced
  • 250 grams deli ham, thinly sliced
  • Butter

 

Instructions

  1. Layer 4 slices of sandwich bread with about 250 grams of melting cheese, 1 thinly sliced pear, and 250 grams of thinly sliced deli ham; top each with bread.
  2. Heat a large fry pan over medium heat.
  3. Spread the outside of both bread slices with butter.
  4. Cook sandwiches in batches (if necessary) until golden and cheese is melted, flipping once, 3 to 5 minutes per side.
  5. Cut sandwiches in half and serve hot.
  6. Enjoy!

Foodie Friday! Poached Pears with Dark Chocolate Sauce

Poached Pears with Dark Chocolate Sauce

There’s only one thing to do on Foodie Friday on the Easter long weekend, cook pears with chocolate! This quick and easy recipe is in-season, delicious, and perfect for your Easter celebrations! 

 

Poached Pears with Chocolate SauceTotal Time: 30 mins

Serves: 4

 

Ingredients

  • 4 Beurre bosc pears
  • 1/2 cup caster sugar
  • 2 cups water
  • 1 cinnamon stick

 

Chocolate Sauce Ingredients

  • 200g dark chocolate, finely chopped
  • 1/2 cup cream
  • 1 tbsp butter
  • 3 tbsp Frangelico liqueur (optional)
  • 1 tsp ground cinnamon

 

Instructions

  1. In a small saucepan, bring the water, caster sugar and cinnamon to the boil.
  1. Peel the pears, leaving the stems intact.
  1. Place the pears in the sugar syrup, return to the boil and immediately remove from the heat and set aside to cool. The remaining heat will continue to cook the pear.
  1. In a small pan, heat the cream, cinnamon and butter and remove from the heat just before it boils.
  1. Whisk in the dark chocolate and Frangelico until the chocolate is entirely melted and you have chocolate sauce.
  1. Serve one pear per guest with the chocolate sauce drizzled over the top.
  1. Enjoy!

Foodie Friday! Autumn Pear Salad

Foodie Friday is here, and with it, the recipe for this delicious Autumn pear salad! Pick up some fresh, juicy pears from us at the market this weekend and enjoy! See our web calendar for market dates.

 

Autumn Pear SaladServes: 5

 

Balsamic Vinaigrette Ingredients

  • 1/3 cup extra virgin olive oil
  • 2 1/2 Tbsp balsamic vinegar
  • 1 Tbsp honey
  • 1 tsp dijon mustard
  • 1 1/2 Tbsp finely diced shallot
  • Salt and freshly ground black pepper

 

Salad Ingredients 

  • 1/2 cup chopped walnuts
  • 1 Tbsp salted butter
  • 1 Tbsp packed light-brown sugar
  • 7 oz Spring Salad & Spinach blend
  • 2 oz parmesan cheese, shaved
  • 2 Red Anjou Pears, sliced thin (Bartlett pears work fine too)
  • 1/3 cup dried sweetened cranberries

 

Instructions for the vinaigrette dressing:

  1. To a blender add olive oil, balsamic vinegar, honey, dijon mustard, diced shallot and season with salt and pepper to taste.
  2. Blend mixture until well emulsified, about 20 seconds.
  3. Store in refrigerator in an airtight container until ready to serve.

 

Instructions for the salad and candied walnuts:

  1. In a medium skillet melt butter along with brown sugar over medium heat.
  2. Once mixture has melted add walnuts and cook, stirring constantly until caramelized, about 2 minutes. Transfer to a plate in a single layer to cool.
  3. Layer lettuce and pears in a large bowl and toss with dressing, then top with parmesan, dried cranberries and candied pecans and serve.
  4. Note: top this salad with dressing just before serving, as it will wilt the lettuce after a while.
  5. Enjoy!

Pear Ginger Spinach Detox Juice

 

Happy New Year Perry lovers! There’s no doubt you all spent the Holiday Season over-indulging in all things delicious, so for our first Friday Shake Up for 2015 we’re bringing you a detox juice!

 

This delicious detoxifying pear, ginger and spinach green juice is perfect for the morning after, so you can get stuck into 2015 minus the hangover!

 

Total time: 5 minutesPear Ginger Spinach Detox Juice in glass

Serves: 2

 

Ingredients

  • 1 large cucumber, roughly chopped
  • 2 ripe pears, roughly chopped
  • 1 cup packed baby spinach
  • 1-inch piece of fresh ginger
  • ½ a lemon

 

Instructions

  1. Add all the ingredients to a juicer or blender and combine until desired consistency is achieved.
  2. Stir then divide evenly between two glasses.
  3. Enjoy!

Pear Fizz Holiday Cocktail!

In the spirit of the Holiday Season, this week we’re not waiting for Friday to shake things up! Instead, we’re bringing you this fun and fruity Pear Fizz Cocktail, just in time for Christmas Eve.

 

Total time: 5 minutes

Pear Fizz Cocktail

 

Ingredients

  • 2 cups of pear juice (available from Paracombe Premium Perry)
  • 1/3 cup of pear-flavoured liqueur
  • 1 bottle of sparking wine (Prosecco, Champagne, Cava or sparking cider)
  • 1 pear, pomegranate seeds and/or fresh rosemary to garnish (optional)

 

Instructions

  1. Combine pear juice and pear-flavoured liqueur in a pitcher. Stir together and chill in refrigerator until cold.
  2. Fill champagne glass 2/3 of the way with pear mixture, and then fill glass to top with sparking wine.
  3. Optional: Garnish each glass with thinly sliced pear wedges, pomegranate seeds, or a sprig of fresh rosemary.
  4. Enjoy & Happy Holidays!

Friday Shake Up! Pear Vanilla Cocktail

Pear Vanilla Cocktail

 

It’s Friday night and we need a cocktail! Time to shake up your weekend with this week’s Paracombe Premium Perry Pear Vanilla Cocktail – delicious made with our Bosc pears!

 

Total time: 5 minutes Pear Vanilla Cocktail

 

Ingredients

  • 1 ounce of vanilla vodka
  • 1 ounce of pear vodka (or pear juice for a slightly sweeter cocktail)
  • Club soda (to fill glass)
  • ½ small Bosc pear
  • Sanding sugar (for garnish)
  • Fresh nutmeg
  • Shaved ice 

(NB: 1 ounce equals approx. two tablespoons)

 

Instructions

  1. Process ice into a shaved-ice texture using a mixer/food processor.
  2. Use a pear slice to moisten glass rim and pour sanding sugar and freshly grated nutmeg onto a plate. Press the moistened rim into the sugar to coat it.
  3. Add the shaved ice to the glass. Pour vodkas (and/or pear juice) and club soda to fill.
  4. Slice Bosc pear rounds and position in glass and stir.
  5. Enjoy!

It’s Friday! Time to shake up your weekend with this week’s Paracombe Premium Perry Pear & Cranberry Bellini – delicious made with our pear juice!

 

These pretty drinks pair well at holiday gatherings with great friends and a stocking full of good cheer!

 

Total time: 5 minutesPear and Cranberry Bellini

Serves: 8

 

Ingredients

  • 1 cup pear juice (or nectar)
  • 1 cup cranberry juice cocktail
  • 1 bottle Prosecco or other dry sparkling white wine

 

Instructions

  1. In a small pitcher or large liquid measuring cup, combine pear nectar and cranberry juice cocktail.
  2. Pour ¼ cup juice mixture into each of the eight champagne glasses.
  3. Divided evenly, top with Prosecco or a dry sparkling white wine of your choice.
  4. Enjoy!

It’s the weekend and we’re ready for a cocktail! How about you? Shake up your weekend with this week’s Paracombe Premium Perry Vanilla Pear Cocktail – delicious made with our pear juice and fresh pears!

Serves: 4

 

Ingredients

  • 12 ounces pear juice
    (available from Paracombe Premium Perry Market Stalls!)
  • 6 ounces pear vodka
  • 1 teaspoon vanilla bean paste
  • Coarse sugar for rim
  • Fresh pear slice for garnish

 

Instructions

  1. In a cocktail shaker, mix together the pear juice, vodka, and vanilla bean paste – and shake!
  2. Pour the cocktail into a glass with ice and a sugared rim.
  3. Garnish with a Paracombe pear slice.
  4. Enjoy!

Friday Shake Up! Pear Rum Blush

Shake up your weekend with this week’s Paracombe Premium Perry pear cocktail, the Pear Rum Blush
– it’s delicious made with our pear juice!

 Pear Rum Blush

Prep time: 5 minutes

 

Ingredients

  • 1 1/2-ounce pear juice
    (available from Paracombe Premium Perry market stalls!)
  • 3/4-ounce dark rum
  • 1-tablespoon cherry grenadine
  • 1 tablespoon lemon juice
  • 1 ounce prosecco
  • Pear slice for garnish

 

Instructions

  1. Pour the pear juice, rum, grenadine and lemon juice into a cocktail shaker with ice. Shake until the outside of the vessel is ice cold. Pour entire contents of shaker into a highball glass.
  2. Gently pour (or float) prosecco into the glass and garnish with a Paracombe pear slice.
  3. Enjoy!

Friday Shake Up! Minty Pear Mojito

Minty Pear Mojito

Summer’s on the way, so every Friday on the Paracombe Premium Perry blog we’ll be bringing you a pear or Perry cocktail to shake up your weekend, like this Minty Pear Mojito – it’s delicious made with our Packham Pears.

 

Pear-Mojito-Feature

Prep time: 5 minutes

Serves: 4

 

Ingredients

  • 2 cup peeled and chopped Packham Pears
    (available from Paracombe Premium Perry market stalls!) 
  • ¾ cup fresh mint leaves (about 5-7 mint leaves per drink)
  • 3-4 tablespoons agave nectar (You can also use simple syrup instead – equal parts sugar and water, heated on the stovetop)
  • 4 tablespoons fresh lime juice
  • 5 ounces good quality white rum or vodka
  • 6 cups club soda

 

Instructions

  1. Place the chopped pears, mint leaves, agave nectar, and lime juice in the bottom of your pitcher (you can also make this in individual glasses. This recipe is for four glasses, so just quarter the recipe for one glass) and muddle the ingredients to combine the flavors.
  2. Pour in liquor and club soda and stir slowly to combine.
  3. Pour over ice and serve! Top with more fresh mint or lime wedges.
  4. Enjoy!
